Each Wednesday, The Citizen features someone in the food services industry from the Finger Lakes community in The Banks:

This week, we spotlight Jeff Fresina.

Q. What is the one food you cannot live without? Why?

A. Pasta, I love pasta.

Q. Fill in the blank. People would be surprised to know that even though I work in the food industry, when I am at home in the kitchen, I __________.

A. Still like to be creative. I like to come up with new ideas. I try to throw the simplest ingredients together and come up with a new dish that looks good and tastes good.

Q. What do you like most about living and working in the Finger Lakes region?

A. I like the beautiful countryside, driving by and seeing the nice foliage, beautiful farmlands and small villages.

Q. If you were given $1 million to open your own restaurant, describe it and what type of food you would serve.

A. It'd be an Italian/American restaurant that serves pasta, steaks and chops. It would have live entertainment and be handicap accessible, and it would be for children. Children are very important.

Q. Where would it be located?

A. Skaneateles. It's such a great draw, you have the lake, nice people and you get a few familiar stars around every now and then.

Q. On the day of your restaurant's grand opening, if you could select anyone in the world to be your first three guests, who would they be?

A. Emeril Lagasse, President George Bush and Michael Jordan. I always wanted to meet them, and I appreciate all that they do in different fields. And I get to say I met someone famous.

Q. Describe your most embarrassing moment while on the job.

A. Calling a manager by the wrong name. I was nervous and mistook her for someone else, but the worst part is that someone else was no longer with the company.

Q. What is your favorite junk food?

A. I like Little Debbie

Ho-Hos.

Q. What have you learned are the top three ways to run a successful food business?

A. Customer service, a good staff and serving quality food.

Q. If you weren't working in the food business, what would you like to be doing?

A. Working with kids that have disabilities or are disadvantaged.

Q. Ughh. What's the one food which you absolutely can't stomach? Why?

A. I don't like squid or octopus. I like other seafood, but those get me the wrong way. There's too much of a fishy taste.
