Each Wednesday, The Citizen features someone in the food services industry from the Finger Lakes community in The Banks: This week, we spotlight Catlin Grutzik, who works at the New York Pizzeria in Weedsport.
Q. What is the one food you cannot live without?
A. Just pizza, because I'm around it all day and I've been here a number of years.
Q. Fill in the blank. People would be surprised to know that even though I work in the food industry, when I am at home in the kitchen, I __________.
A. Cook for my girlfriend.
Q. What do you like most about the Finger Lakes?
A. It's beautiful and nice. I got everything around me within a couple hundred miles; I can basically do anything. The seasons are good, the fall is fun and you can snowmobile in the winter.
Q. If you were given $1 million to open your own restaurant, describe it and what type of food you would serve.
A. A pizza shop, because I know how to do everything. I know the ins and outs, so I could establish one if I needed to.
Q. Where would it be located?
A. By a beach in Florida or California.
Q. On the day of your restaurant's grand opening, if you could select anyone in the world to be your first guests, who would they be?
A. My parents and brothers, my girlfriend, Nicole, and close friends.
Q. What is your favorite junk food?
A. I like Caramello and Reeses. My favorite is probably Red Bull though.
Q. What have you learned are the top three ways to run a successful food business?
A. If you wouldn't eat it, don't serve it; keep it clean and don't burn your bridges.
Q. If you weren't working in the food business what would you like to be doing?
A. Enjoying life with what I have and growing.
Q. Ughh. What's the one food which you absolutely can't stomach? Why?
A. Anchovies. They have this disgusting texture and taste. There's not a sauce you could put on them to make me eat it. And I've tried.
