Each Wednesday, The Citizen features someone in the food services industry from the Finger Lakes community in The Banks: This week, we spotlight Patrice A. Henry of Irie Jamaican Queen in Auburn.
Q. What is the one food you cannot live without? Why?

A. Brown stew chicken. It's such a nice flavor and is mouth-watering.

Q. Fill in the blank. People would be surprised to know that even though I work in the food industry, when I am at home in the kitchen, I __________.

A. Still love to cook.

Q. What do you like most about living and working in the Finger Lakes region?

A. It's been developing a lot in the past years. It's a good place for kids and a very quiet area.

Q. If you were given $1 million to open your own restaurant or bar, describe the bar or restaurant and what type of food you would serve.

A. My same Jamaican restaurant. Maybe I would expand it into other nationalities like American food or other island food.

Q. Where would it be located?

A. Still here in Auburn.

Q. On the day of your restaurant/bar's grand opening, if you could select anyone in the world to be your first three guests, who would they be?

A. The Righteous Brothers, my Lord who's always with me, and Joel Osteen, the preacher.

Q. Describe your most embarrassing moment while working on the job.

A. I haven't had one yet ... knock on wood.

Q. What is your favorite junk food?

A. I don't have one because I don't like junk food.

Q. What have you learned are the top three ways to run a successful food business?

A. Provide customers with what they want, a friendly atmosphere and courtesy.

Q. If you weren't working in the food business, what would you like to be doing?

A. Traveling all over the world.

Q. Ugh. What's the one food which you absolutely can't stomach? Why?

A. Anchovies. I don't like them.
