This week, we spotlight Carol Hendrickson of Parkers' Grille & Tap House.
Q. What is the one food you cannot live without? Why?
A. King crab. It's just delightful.
Q. Fill in the blank. People would be surprised to know that even though I work in the food industry, when I am at home in the kitchen, I __________.
A. Am always whipping up some new creation. It's fun and relaxing for me.
Q. What do you like most about living and working in the Finger Lakes region?
A. The great and many wineries, the beautiful lakes, the small town atmosphere and the wonderful people I have met over the years.
Q. If you were given $1 million to open your own restaurant, describe it and what type of food you would serve.
A. It would be a small, quaint hometown place with a variety of foods, from gourmet to just burgers. People like real, affordable good food and good service.
Q. Where would it be located? Why?
A. Small town America. I like the small town atmosphere, where everyone knows your name. Many of my regular customers have become very good friends, and you meet so many people just passing through.
Q. On the day of your restaurant's grand opening, if you could select anyone in the world to be your first three guests, who would they be?
A. My mother, father and daughter: my three best critics.
Q. Describe your most embarrassing moment while working on the job.
A. I really haven't had a bad one yet.
Q. What is your favorite junk food?
A. Chocolate - it just makes me feel good.
Q. What have you learned are the top three ways to run a successful food business?
A. Good service, quality food and consistency.
Q. If you weren't working in the food business what would you like to be doing?
A. Organizing benefit events, such as golf tournaments. I like raising money for charities and non-profit organizations.
Q. Ugh. What's the one food which you absolutely can't stomach? Why?
A. Sushi - raw fish just doesn't do it for me.
