This week, we spotlight Manny Gomes of Denny's.
Q. What is the one food you cannot live without? Why?
A. Bread. I love bread, especially Italian.
Q. Fill in the blank. People would be surprised to know that even though I work in the food industry, when I am at home in the kitchen, I __________.
A. I love to cook.
Q. What do you like most about living and working in the Finger Lakes region?
A. The seasons. I'm originally from New York City, and we didn't get the winters like we do here. But we don't get the smog here.
Q. If you were given $1 million to open your own restaurant, describe it and what type of food you would serve.
A. I'd serve several different types of food, like Italian, Greek, Spanish and maybe Indian. I'd call it “A Taste of Something Else.”
Q. Where would it be located? Why?
A. I'd put it in Auburn; I already have my own clients here.
Q. On the day of your restaurant's grand opening, if you could select anyone in the world to be your first three guests, who would they be?
A. My mom, my brother and my better half.
Q. Describe your most embarrassing moment while working on the job.
A. The day I ripped my pants and didn't realize it, so I was walking around with the rip showing.
Q. What is your favorite junk food?
A. Potato chips.
Q. What have you learned are the top three ways to run a successful food business?
A. How you greet people, the consistency in the food and always providing pleasant service.
Q. If you weren't working in the food business what would you like to be doing?
A. I'd be redoing antiques, that was my hobby when I was a kid.
Q. Ugh. What's the one food which you absolutely can't stomach? Why?
A. Okra - it's slimy.
