Each Wednesday, The Citizen features someone in the food services industry from the Finger Lakes community in The Banks:
This week, we spotlight William Kindred of Domino's Pizza.
Q. What is the one food you cannot live without? Why?
A. Hamburgers, I like a nice deluxe one with everything, when it's big, massive and jaw-breaking.
Q. Fill in the blank. People would be surprised to know that even though I work in the food industry, when I am at home in the kitchen, I __________.
A. Love to cook, four to five nights a week.
Q. What do you like most about living and working in the Finger Lakes region?
A. What I like most is the scenery and the changing colors. I like working in Auburn because when you get a job, it's pretty secure because you can't afford to lose it.
Q. If you were given a million dollars to open your own restaurant or bar, describe the bar or restaurant and what type of food you would serve.
A. It'd be a sports bar with all kinds of food, we'd have casual stuff like chicken wings during football games, and on the other nights of the week it'd be a full restaurant with Italian entree dishes.
Q. Where would it be located? Why?
A. Just outside of Auburn, so it could bring more to the area.
Q. On the day of your restaurant/bar's grand opening, if you could select anyone in the world to be your first three guests, who would they be?
A. First would be Frank Gore from the San Francisco 49ers, they're my favorite team and he had a phenomenal year. Then the president, just to be able to say he was in my restaurant. And then my grandfather, because he's one of the biggest critics on the face of the planet and if I can please him, I know I'm doing well.
Q. Describe your most embarrassing moment while working on the job.
A. The day I dropped an extra large Extravaganza on the floor. I had been here for four days when that happened.
Q. What is your favorite junk food?
A. Sour gummi worms.
Q. What have you learned are the top three ways to run a successful food business?
A. You have to have good clientele, a great staff - without one it's hard to accomplish what you need - and a great product, because if someone doesn't want it, you have no shot.
Q. If you weren't working in the food business what would you like to be doing?
A. I'd coach football, probably a defense coach on any team, just to have the opportunity to be out there.
Q. Ughh. What's the one food which you absolutely can't stomach? Why?
A. Liver. I can't stand the smell, get it away from me.
