This week, we spotlight Francisco Ramirez, of El Canelo Mexican Restaurant.
Q. What is the one food you cannot live without? Why?
A. Steak, because it keeps me full for a long time.
Q. Fill in the blank. People would be surprised to know that even though I work in the food industry, when I am at home in the kitchen, I __________.
A. Normally cook breakfast for me and my little boy.
Q. What do you like most about living and working in the Finger Lakes region?
A. It's very peaceful and the people are really friendly.
Q. If you were given a million dollars to open your own restaurant, describe it and what type of food you would serve.
A. Definitely a Mexican restaurant. It would be a family place, with big TVs everywhere so people could watch sports, too.
Q. Where would it be located? Why?
A. Tennessee, that's where my family is from.
Q. On the day of your restaurant's grand opening, if you could select anyone in the world to be your first three guests, who would they be?
A. Cuauhtemoc Blanco (Mexican soccer star), my mom and my wife.
Q. Describe your most embarrassing moment while working on the job.
A. Once I dropped a plate with a guacamole salad on the floor in front of a lot of people.
Q. What is your favorite junk food?
A. Wendy's Spicy Chicken Sandwich.
Q. What have you learned are the top three ways to run a successful food business?
A. Being friendly, being respectful and making sure people have a good dinner by asking if they had enough drinks and things like that.
Q. If you weren't working in the food business what would you like to be doing?
A. I would be in construction, building houses - not with wood, with brick and stucco.
Q. Ughh. What's the one food which you absolutely can't stomach? Why?
A. Fish, I don't like tilapia very much.
